🥧 Crust Ingredients:
✔️ 2 cups (240 g) all-purpose flour (or spelt/whole wheat flour, adjusting liquid if needed)
✔️ 1 teaspoon salt
✔️ ¾ cup (170 g) cold butter (cut into small pieces)
✔️ ¾ cup (180 ml) cold water (adjust if needed for consistency)
🥄 Instructions for Crust:
1️⃣ In a large bowl, mix flour and salt.
2️⃣ Add cold butter pieces and rub everything together with your hands until the mixture resembles coarse crumbs.
3️⃣ Gradually add cold water, mixing gently until the dough forms.
4️⃣ Try not to knead too much—just bring the dough together.
5️⃣ Wrap the dough in plastic wrap and chill for at least 30 minutes in the fridge.
🧅 Onion Filling Ingredients:
✔️ 6 cups (900 g) onions (thinly sliced)
✔️ 4 tbsp (30 g) flour
✔️ 1½ cups (360 ml) heavy cream
✔️ 2 eggs
✔️ 4 tbsp (60 g) salt
✔️ Black pepper & nutmeg (a pinch of each, to taste)
🥄 Instructions for Filling:
6️⃣ In a large pan, cook onions over low heat for 20–30 minutes, stirring constantly until soft and caramelized.
7️⃣ Add flour and heavy cream, mixing well. Let it cool slightly.
8️⃣ Once cooled, stir in eggs, salt, black pepper, and nutmeg until well combined.
🥧 Assemble & Bake:
9️⃣ Preheat the oven to 430°F (220°C).
🔟 Roll out the chilled dough and press it into a buttered 10-inch (25 cm) round cake tin.

1️⃣2️⃣ Pour the onion mixture over the dough base and spread evenly.
