Onion Pie
butter the 10 inch round cake tin
2 cup of all purpose flour
1 teaspoon salt
3/4 cup of cold butter in small pieces
3/4 cup of cold water
Put everything in a bowl and rub it all through your clean hands. Then put it all together to a dough. Add additional flour or water if needed. Try not to knead it. Put the dough in the fridge for at least 30 minutes so it can rest.
You can use a different flour if you prefer that but you might have to add more liquid to the dough though.
6 cups of onions
4 tablespoons of flour
1 1/2 cups of heavy cream
2 eggs
4 tablespoons of salt
black pepper, nutmeg (just a little bit)
Cut the onions into fine strips and steam it on a low level for 20-30 minutes, stirring constantly. Add the flour and cream. Mix it all together and let it cool down. Add the egg, salt, black pepper and nutmeg and mix it well.
Roll out the dough and put it in the buttered cake tin. Cut out the dough base with a fork. Put the onions you prepared on the dough base.
Bake on lower oven half for 40 minutes. 430 degrees Fahrenheit
