✔️ 1 tbsp (15 ml) lemon juice
✔️ 1 tbsp (12 g) cane sugar

🥄 Instructions for Berry Sauce:

1️⃣ In a blender or food processor, purée the berries with lemon juice and cane sugar until smooth.
2️⃣ Strain through a fine-mesh sieve to remove seeds (optional for a smoother sauce).
3️⃣ Set aside 6 tbsp for the mousse, and use the rest for layering.

🍇 Berry Mousse Ingredients:

✔️ 2 cups (480 g) mascarpone
✔️ 2 cups (480 g) low-fat quark or Greek yogurt (for a lighter version!)
✔️ 4 tbsp (50 g) cane sugar
✔️ 1 tsp vanilla extract
✔️ 6 tbsp (90 ml) berry sauce (from above)

🥄 Instructions for Berry Mousse:

4️⃣ In a mixing bowl, whisk together mascarpone, quark (or Greek yogurt), cane sugar, and vanilla extract until smooth.
5️⃣ Gently fold in 6 tbsp of berry sauce to enhance the flavor.

🍹 Assembling the Dessert:

6️⃣ Use champagne glasses, dessert cups, or small bowls for serving.
7️⃣ Layer the dessert beautifully:

  • Start with a layer of berry mousse

  • Add a drizzle of berry sauce

  • Repeat layers until the glass is almost full
