Berry Mousse with Sauce
For 4 people
Berry Sauce:
3 cups of berries (blackberries, strawberries, raspberries)
1 tablespoon lemon juice
1 tablespoon cane sugar
Berry Mousse:
2 cups of mascarpone
2 cups of low-fat quark or low-fat Greek yogurt
4 tablespoons of cane sugar
1 teaspoon of vanilla extract
6 tablespoons of berry sauce
For the Berry sauce use whatever berries you prefer. Purée berries together with lemon juice and cane sugar.
For the Berry mousse mix mascarpone, low-fat quark or Greek yogurt , cane sugar, vanilla extract and 6 tablespoons of Berry sauce together.
Use champagne glasses or small bowls. You’ll basically make layers with the Berry mousse and Berry sauce to make it look pretty. You start with the mousse. Then you put some of the sauce. You’ll repeat this until the glass or bowl is almost full or however much you want to serve each individual.
