🍵 Ingredients:

✔️ 2 tbsp (30 g) butter (melted)
✔️ 2 eggs
✔️ ½ teaspoon salt
✔️ ½ teaspoon vanilla extract
✔️ 1 teaspoon matcha powder (high-quality ceremonial or culinary grade works best!)
✔️ 2 tbsp (25 g) cane sugar
✔️ 2 cups (480 ml) milk (regular or plant-based)
✔️ 1 cup (120 g) flour (spelt or all-purpose flour work well!)

🥞 Instructions:

1️⃣ Melt the butter – In a large mixing bowl, melt the butter and let it cool slightly.

2️⃣ Whisk the wet ingredients – Add eggs, salt, vanilla extract, and matcha powder to the butter. Whisk until smooth.

3️⃣ Incorporate the dry ingredients – Add cane sugar and flour, then gradually pour in milk, whisking continuously until the batter is smooth and lump-free.

4️⃣ Let the batter rest – Let it sit for 10 minutes to allow the matcha flavor to develop and ensure smoother crêpes.

🍳 Cooking the Crêpes:

5️⃣ Heat the pan – Place a non-stick frying pan over low heat and lightly grease it with butter.

6️⃣ Cook the crêpes – Pour a small ladleful of batter into the pan, swirling it around to create a thin, even layer.

7️⃣ Flip when ready – Cook for about 1–2 minutes, until the edges lift slightly, and the batter is no longer liquid. Carefully flip and cook for another 30 seconds to 1 minute on the other side.

8️⃣ Repeat – Continue with the remaining batter, adding a little butter between crêpes if needed.
