✔️ ½ cup (115 g) butter (melted)
✔️ ¼ teaspoon salt
✔️ 2 large eggs
✔️ ¼ cup (60 ml) almond milk (or any milk of choice)
✔️ 1 teaspoon vanilla extract
✔️ 5 very ripe bananas (mashed)
✔️ 2–4 tbsp honey (adjust to taste for sweetness)
✔️ 1 cup (120 g) all-purpose flour (or spelt flour for a healthier option)
✔️ 1 cup (100 g) coconut flour
✔️ 1 teaspoon baking soda
✔️ ½ cup (50 g) rolled oats
✔️ ½ cup (50 g) chopped nuts (walnuts, pecans, or almonds work great!)
✔️ ½ cup (75 g) dark chocolate (chopped or chips)

1️⃣ Preheat the oven to 350°F (175°C). Grease an 8-inch (20 cm) loaf pan with butter or line it with parchment paper.
2️⃣ Melt the butter in a bowl. Add the eggs, salt, and vanilla extract and whisk until smooth.
3️⃣ Mash the bananas with a fork in a separate bowl until soft and creamy. Add them to the mixture along with almond milk and honey. Stir well.
4️⃣ Combine the dry ingredients – Add all-purpose flour, coconut flour, and baking soda to the wet mixture. Gently fold in with a spatula until just combined.
5️⃣ Add the mix-ins – Stir in the oats, chopped nuts, and dark chocolate. Do not overmix!
6️⃣ Pour the batter into the prepared loaf pan. Sprinkle chia seeds or banana slices on top if desired.
7️⃣ Bake for 50–65 minutes or until a toothpick inserted in the center comes out clean.
8️⃣ Cool & enjoy! Let the banana bread rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
