These soft, moist, and delicious blueberry muffins are naturally sweet, packed with juicy blueberries, and topped with crunchy sunflower seeds for a nutritious twist!

🫐 Muffin Ingredients:
✔️ ½ cup (115 g) soft butter
✔️ 2 eggs
✔️ ½ cup (100 g) cane sugar
✔️ ¾ cup (180 g) sour cream (or Greek yogurt for a lighter option)
✔️ 1 teaspoon vanilla extract
✔️ 1¼ cups (150 g) flour (spelt or whole wheat optional)
✔️ 2 teaspoons baking powder
✔️ ¾ cup (100 g) frozen blueberries (do not thaw before baking)
✔️ ¼ cup (30 g) sunflower seeds (raw or roasted, see below!)
✨ Optional Topping:
✔️ Powdered sugar (for a light dusting after baking)
🥄 Instructions:
1️⃣ Prepare the Batter:
Preheat the oven to 400°F (200°C). Butter or line a 12-muffin pan.
In a large bowl, mix soft butter, eggs, sugar, and salt until the batter becomes light and fluffy.
Stir in sour cream and vanilla extract until well combined.
Gently fold in flour and baking powder using a spatula. Do not overmix.
Carefully stir in frozen blueberries so they don’t break apart.
2️⃣ Add the Sunflower Seeds:
Option 1: Raw sunflower seeds – Sprinkle directly on top of the muffins before baking.
Option 2: Roasted sunflower seeds (for a richer, nutty flavor):
Heat a dry pan over medium heat.
Add sunflower seeds and toast for 2–3 minutes, stirring occasionally, until lightly golden.
Let cool before sprinkling them over the muffin batter.
3️⃣ Bake the Muffins:
Fill the muffin pan evenly with the batter.
Bake for 20–25 minutes in the middle of the oven, or until a toothpick inserted in the center comes out clean.
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
4️⃣ Final Touch (Optional):
Once cooled, lightly dust the muffins with powdered sugar for a finishing touch.
