Banana Pancakes 🍌🥞

These fluffy, naturally sweet banana pancakes are packed with wholesome ingredients and have just the right amount of sweetness and warmth from cinnamon. Perfect for a nutritious and satisfying breakfast!

🥞 Ingredients:

✔️ 1 big ripe banana (mashed)
✔️ 1 egg
✔️ ¼ teaspoon salt
✔️ 1 tablespoon (12 g) brown sugar (or coconut sugar, optional)
✔️ ½ teaspoon vanilla extract (or 1 packet vanilla sugar)
✔️ ½ cup (60 g) coconut flour
✔️ ½ cup (60 g) spelt flour (or use all-purpose flour if preferred)
✔️ ¾ cup (180 ml) milk of choice (regular, almond, oat, etc.)
✔️ ¾ cup (180 ml) oat milk (or another milk of choice)
✔️ ½ teaspoon cinnamon (plus more for topping, optional)
✔️ Butter (for greasing the pan)

Optional Toppings:
✔️ Brown sugar & cinnamon (for a lightly sweet finish)
✔️ Fresh banana slices or other fruits
✔️ Drizzle of honey or maple syrup
✔️ Nut butter (almond, peanut, or cashew butter)

🥄 Instructions:

1️⃣ Prepare the batter: In a large bowl, whisk together egg, salt, brown sugar, and vanilla extract until smooth.

2️⃣ Mash the banana: In a separate bowl, mash 1 ripe banana with a fork until soft and creamy. Add it to the wet mixture and stir well.

3️⃣ Incorporate dry ingredients: Gradually mix in coconut flour, spelt flour, and cinnamon, stirring gently to avoid lumps.

4️⃣ Add the milk: Slowly pour in both types of milk, stirring until a smooth, thick batter forms. Adjust with extra milk if too thick or extra flour if too thin.

🍳 Cooking the Pancakes:

5️⃣ Heat the pan: Place a non-stick frying pan over low to medium-low heat and lightly grease with butter.

6️⃣ Cook the pancakes: Pour about ¼ cup of batter into the pan per pancake. Spread it slightly into a round shape.

7️⃣ Flip carefully: Cook for about 5–6 minutes per side, flipping once the edges start to lift and the bottom is golden-brown. Adjust cooking time based on thickness.

8️⃣ Repeat: Continue with the remaining batter, adding more butter as needed.
