Banana Pancake

For 2 people

  • Butter to oil the pan

  • 1 egg

  • 1/4 teaspoon of salt

  • 1 tablespoons of brown sugar

  • Some vanilla extract or vanilla sugar

  • 1 ripe banana

  • 3/4 cup of coconut flour

  • 3/4 cup of spelt flour (you can choose regular flour)

  • 3/4 cups of milk (you can choose plant based)

  • 3/4 cups of oat milk (choose a different milk if you prefer)

  • Brown sugar

  • Cinnamon

Use a bowl and add the eggs, salt, and vanilla. Make sure to stir it well, then slowly add the flower and stir again until it looks smooth.

Smash 1 ripe banana and add them to the badder.

Then add the milk and stir it into the batter.

Use a frying pan and put a little bit of butter in it. Turn on the heat and let it melt. Use a big soup spoon to put some of the badder in the pan. I recommend to cook your pancakes on low heat. Turn your pancake after about 6 minutes (depends on how thick you’re making them) and make sure they look gold-brown on both sides. Before you serve them, you can choose to put a little bit of brown sugar and cinnamon on top of it.
