🥑 Salad Ingredients:

✔️ 4 cups (120 g) arugula
✔️ 4 spring onions (chopped)
✔️ 5 tomatoes (chopped or halved if cherry tomatoes)
✔️ 2 ripe avocados (cubed or sliced)
✔️ 1 cup (100 g) roasted walnuts

🍋 Lime Dressing Ingredients:

✔️ Juice of 1 lime (about 2 tbsp / 30 ml)
✔️ 2 tbsp (30 g) mustard
✔️ 2 tbsp (30 g) sour cream
✔️ 3 tbsp (45 ml) olive oil
✔️ 2 tbsp (4 g) fresh parsley (chopped)
✔️ Salt & pepper to taste

🥗 Instructions:

1️⃣ Prepare the dressing – In a small bowl, whisk together the lime juice, mustard, sour cream, olive oil, chopped parsley, salt, and pepper until smooth and well combined. Set aside.
2️⃣ Chop the ingredients – Slice the spring onions, tomatoes, and avocados.
3️⃣ Assemble the salad – In a large bowl, add the arugula, chopped spring onions, tomatoes, and avocado.
4️⃣ Add the walnuts – Toss in the roasted walnuts for a delicious crunch.
5️⃣ Drizzle & toss – Pour the lime dressing over the salad and gently toss everything together until well coated.
