Healthy Fig Flammkuchen

INGREDIENTS

Dough
200 g (1½ cups) spelt flour


100 ml (⅓ cup + 1 tbsp) lukewarm water
1 tbsp olive oil

½ tsp salt

Toppings

150 g (about ½ cup) Greek yogurt

1 tsp olive oil

70 g (about ½ cup) feta cheese

10 fresh figs, thinly sliced

1 small red onion, thinly sliced

Handful of walnuts, roughly chopped

Fresh rosemary and thyme

Pinch of nutmeg

Salt and freshly ground black pepper

Honey, for drizzling


INSTRUCTIONS

1. Preheat the oven to 220°C / 425°F.

2. Combine the spelt flour and salt. Add the lukewarm water and olive oil and mix until a dough forms. Knead briefly until smooth. The dough should feel soft and pliable rather than dry; if needed, add another teaspoon of water.

3. Let the dough rest for 10 minutes.

4. Place the dough on parchment paper and roll it out very thinly.

5. Stir the Greek yogurt with 1 teaspoon olive oil and a small pinch of nutmeg, salt and pepper. Spread evenly over the dough, leaving a small border around the edges.

6. Top with the feta, figs, red onion and walnuts. Finish with a little rosemary and thyme.

7. Bake for approximately 12–15 minutes, or until the edges are lightly golden and crisp.

8. Finish with a drizzle of honey just before serving.

Best enjoyed warm, with a glass of white wine.
